- Crust Ingredients
- One 9-ounce box chocolate wafers, finely crushed
- Scant 1/4 cup sugar
- 3 tablespoons unsalted butter, melted
- Filling Ingredients
- Three 8-ounce packages cream cheese, at room temperature
- 1 cup sugar
- 1 tablespoon all-purpose flour
- 2 teaspoons vanilla extract
- 1/8 teaspoon salt
- 3 eggs
- 1 cup sour cream
- One 12-ounce package semi-sweet chocolate chips, melted and cooled slightly
- Whipped cream, for garnish
- Chocolate shavings, for garnish
To Make the Crust:?Combine the wafer crumbs with the sugar and butter. Press into the bottom and 1/2 inch up the sides of a 9-inch springform pan.
Preheat the oven to 350 degrees F.
To Make the Filling:?Beat the cream cheese until smooth with an electric mixer at high speed. While the mixer is running, very gradually add the sugar. Mix in the flour, vanilla, and salt; then add the eggs, one at a time, beating well after each addition. Mix in the sour cream, then the chocolate.?
Pour the batter into the prepared pan an bake on the center rack of the oven for 1 hour. Remove and let cool on a wire rack. The center of the cheesecake will be soft when removed from the oven and will firm up as it cools.
For an attractive presentation, garnish with whipped cream and shaved chocolate.
